Doupi (Bean Skin)
Doupi (bean skin) is a well known local dish with a filling of egg, sticky rice, sliced pork, mushrooms and beans cooked between two large round soybean skins and cut into pieces, structurally like a stuffed pizza without enclosing edges. The stuff could be different, like beef and shrimp. It becomes an important part of Wuhan people’s daily diet.
The chewy rice absorbs the mixed flavor of meat, egg, and vegetables. The fried soybean skin is nicely yellow. The dish is presented attractively in all respects, appearance, smell, and taste.
