Beggar’s chicken is part of the famous Jiangzhe cuisine and orginates from Changshu in Jiangsu Province. This tasty dish dates back to the Qing Dynasty and has a famous dish gained its name from folklore. The story involves a beggar who steals a chicken and has no stove to cook the chicken. He then decides to cook the chicken by covering the chicken in mud and baking it in a fire. The delicious aroma from the chicken attracted a noble passing by who liked the chicken so much he had the dish served at Imperial Court.
Today the dish is prepared much more hygienically with the chicken being wrapped in layers of lotus leaves and is then covered with a layer of dough instead of mud before baking. The dish is famous for its succulent flavors and tender chicken meat.
