Min cuisine, short name of Fujian cuisine, is one of the eight native Chinese cuisines originated from Fujian Province. Highlighted by feature of retaining the original flavor of the main ingredients, Min cuisine is noted for its light but flavorful, soft and tender, sweet but salty characteristics. Min cuisine is composed of three styles, namely Fuzhou style, Western Fujian style, Southern Fujian style.

Fuzhou style dishes are fresher and more delicious but less salty, sweet and sour compared with other two styles. But Western Fujian style dishes center on the flavor of sweet and hot by the using of hot sauces, custard and orange juice as flavorings. However, Western Fujian style dishes are salty combined with the strong local flavors of Hakka.

Min cuisine takes the essence of applying soup and using red rice wine, also various kinds of sauces and seasonings to create the unique tastes of salty, sweet, sour and spicy. Buddha Jumps Over the Wall, Stewed Chicken with Three Cups Sauce and Steamed Chicken in Red Fermented Rice are some of the famous dishes of Min cuisine.

Buddha Jumps Over the Wall
Buddha Jumps Over the Wall, called Fo Tiao Qiang in Chinese, is one of the famous dish of Min cuisine. This special dish is famous for its rich taste with a complex of eighteen main ingredients and twelve condiments like shark fin, sea cucumber, abalone and Shaoxing wine. This dish is made with special cooking manner, it usually takes one to two days to complete the dish.

Yin Yang Taro
This sweet dish is made of mashed taro which is shaped into Yin Yang. This dish is famous for its sweet silky taro texture which is served hot.

Five Spice Rolls
The Five Spice Rolls are made by wrapping minced pork and vegetables into a sheet of tofu skin and deep fried. The results are a crisp outer coating with a succulent pork filling.
