Yue cuisine, also known as Guangdong cuisine and Cantonese cuisine, is one of the eight native cuisines in China. It has obtained high reputation at home and abroad for its distinguished styles of dishes and unique attraction.Yue cuisine is typically represented by three styles, Guangzhou dishes, Hakka dishes and Chaozhou dishes, among which Guangzhou dishes are the typical representatives.

Guangzhou
Yue dishes are characterized by its intensively selected materials, exquisite techniques and large varieties of dishes. Hakka dishes are good at meat dishes but less aquatic materials, while Chaozhou dishes are experts at seafood and beet dishes. Generally Yue cuisine is flavored at light, fresh and tender by the emphasis on color, fragrance and taste. Also the utilization of sauces is another outstanding feature.

White Cut Chicken
White Cut Chicken is a famous dish in Yue cuisine. The chicken is boiled in water to get a golden color but timing has to be strictly controlled to keep the chicken taste fresh and tender. When eaten, the chicken is cut into pieces and dipped with scallion and ginger sauce.
