Zhejiang Cuisine also known as Zhe Cuisine is one of the Eight Regional Cuisines of China. Zhejiang Cuisine is made up of specialties from Hangzhou, Ningbo and Shaoxing. Zhejiang Province is regarded as the Land of Fish and Rice therefore ingredients are always fresh. Of the eight regional cuisines Zhejiang Cuisine is famous for its fresh, tender and subtle fragrant taste. The most notable and widely recognized type of Zhejiang Cuisine is Hangzhou Cuisine also known as Hangbang Cuisine. 

The preparation techniques and ingredients used in Hangzhou, Ningbo and Shaoxing are different and unique. Hangzhou cuisine relies on stewing, deep frying, sautéing and stir frying to create delicate dishes that are fragrant and change accordingly to the seasons. On the other hand Ningbo cuisine uses seafood that are prepared by steaming, roasting or braising in comparison to Hangzhou and Shaoxing dishes it is more salty in taste. Lastly Shaoxing Cuisine uses ingredients from the river such as fresh water shrimps and fish. Shaoxing cuisine creates its unique taste with the use of Shaoxing Yellow Wine.

Dongpo Pork
Dongpo Pork is a Hangzhou dish named after the famous poet Su Dongpo who was also a major political figure during the Song Dynasty. The pork used is half fat and half lean and famous for its non-greasy and glazed appearance which has a light yellow wine fragrant taste.

Longjing Shrimps

Longjing Tea Shrimps is one of the most refreshing dishes in Hanghzou. The fresh water shrimps are coated in egg whites and starch and then stir-fried with Longjing Tea and Shaoxing Wine. The results is an aromatic fragrant dish infused with the fresh taste of Longjing Tea.

West Lake Vinegar Fish
West Lake Vinegar Fish is a classic, delicious and appetizing delicacy. The vinegar fish dates back to the Song Dynasty and is made using Carp, Shaoxing Wine, vinegar, soy sauce and sugar. The fish is tender and accompanied with the distinct sweet and sour sauce the combination is certainly tasty.
